Mouth-watering Couscous
3 boxes of couscous (boil water according to box until boiling - pour over couscous and cover). This probably is like 5 minutes.
Microwave with very little water - 1 frozen bag of sweet corn kernels and 1 frozen bag of baby peas.
Dice up garlic (lots), zuchinni, red onions, red/yellow/orange peppers, celery, mushrooms and stick on a Pam'd tray. Cover with splattering of olive oil, sea salt and pepper to taste. Roast in 425 oven until onions are translucent for about 10 minutes.
Fluff up couscous - add more olive oil and the juice of 1 lemon and 1 lime. Add roasted veges and mix in well and add more sea salt and pepper to taste. Add chopped up cilantro and mint and basil and a sprinkle of crushed red pepper just before serving. Just for the heck of it - a dash of paprika.
Serve in a big bowl and take all the credit (hehe). Serving options...great when served with grilled ribs, chicken or salmon. |
