7up Pound Cake

Preheat over to 325 degrees  - Grease and flour a 10 inch bundt tube pan

Bake for 1 Hour and 45 minutes or until cake tester comes out clean...

You will need.....

1 cup butter - Softened

1/2 cup Shortening

3 cups Sugar

1 1/2 teaspoon Lemon extract

5 eggs - at room tempature

3 cups all purpose flour

1/2 teaspoon salt

1 cup 7up

For the Glaze....

1/4 cup 7up

1/2 cup sugar

-------------------------------------------------------------------------------------------------------Combine butter,shortening,sugar,vanilla and lemon extract in the bowl and beat on low until light and fluffy. About 5 minutes

Add eggs 1 at a time beating well after each addition.

In a separate bowl - Combine the flour and salt and stir with a whisk or fork until mixed together.

Add flour mixture to butter/sugar batter -  1 wooden spoon of flour mixture at time with 2 tablespoons of 7up mixing together. You want to mix flour with 7up in batter mixture together to give it that 7up taste otherwise the cake will taste like a dull buttermilk cake.

Spoon batter into prepared 10-inch bundt pan and Bake for  1 hour and 45 minutes.  Cool in pan on a wire rack for 10 minutes,then invert on serving plate and remove pan.

While cake is cooling,make the glaze by stirring together the 1/4 cup 7up and 1/2 cup sugar in a saucepan.  Bring to a boil over medium heat 1-2 minutes or until sugar is completely dissolved.  Punch holes with a fork or toothpick on top of cake and spoon glaze over cake and cool completely before serving.
